- 225g any ground meat - such as turkey, pork, chicken
- 1 egg
- 60ml half fat or semi-skimmed milk
- 250g mushrooms
- 2 tbsp mixed leafy herbs (any such as parsley, coriander/cilantro, oregano)
- 4-5 slices of leftover bread, torn into small pieces
- pinch salt and pepper
- Heat the oven to 170C. Chop the mushrooms (including the stems) and herbs in small pieces. Set aside.
- Place the bread in a bowl, pour over the milk and allow to soak for 10 minutes.
- Add all other ingredients (except the oil) and mix well. Using your clean hands, form balls with the mixture and place onto a lined baking sheet.
- Bake in the oven for 15-20 minutes until the meatballs are lightly browned. Serve warm with your choice of salad.
Great served with nutty brown rice or spaghetti.
