- 60g chia seeds
- 120ml reduced fat or lighter coconut milk
- 200ml low fat yoghurt (plain or vanilla)
- 100g mixed berries (fresh or frozen)

- In a bowl, combine the chia seeds and coconut milk mixing continually to avoid formation of any lumps. Continue stirring for around 10 minutes to allow mixture to thicken and chia seeds to absorb the fluid. Option to use immediately or store in the fridge for 1-2 days.
- To make the fruit compote, place the mixed berries in a small pan over a low heat. Add a small splash of water and allow berries to cook gently for about 5 minutes until soft. Take off the heat and allow to cool.
- Begin layering your dessert. In a glass, jar or container, start with a layer of compote, then carefully layer the coconut chia seed mixture on top of this, following by the yoghurt. Repeat until your glass, jar or container is full. Tip - watch the video below to see the best technique to achieve clean layers.
- To finish, decorate with fresh fruit and enjoy chilled.
Easy to make and stores in the fridge for 1-2 days. Coconut milk soaked chia seeds could also be used as a quick and healthy breakfast option mixed with oats, fresh fruit or low fat yoghurt.
