- 4 medium carrots, peeled and grated
- 4 green eating apples, grated
- 1/4 medium savoy cabbage, shredded
- 1/4 medium red cabbage, shredded
- 100ml low fat mayonnaise
- 40g poppy seeds
- pinch salt and pepper
- 1 lemon, zest and juice
- Prepare all the slaw ingredients. Then add the carrots, apples, cabbage and poppy seeds to a bowl.
- In a small jug whisk together the mayonnaise, lemon juice, lemon zest and salt and pepper. Drizzle over the slaw mixture.
- Keep chilled until ready to serve.
