- 250g bulgur wheat
- 250g tin or packet of cooked chickpeas
- 25g fresh coriander (cilantro), chopped
- 100g green onion, finely diced
- 25g pomegranate seeds
- 100ml olive oil
- 1-2 limes, juice
- 1 tbsp honey
- 1/2 tsp cinnamon
- 1/2 tsp chilli flakes
- Cook the bulgur wheat according to pack instructions.
- Make the dressing by combining the oil, lime juice and honey with the spices - shake or combine well.
- Combine all other ingredients and drizzle with the prepared dressing - divide into four and serve.
Chefs Tips
For an additional healthy boost, top your salad with a spoonful of toasted mixed seeds. Why not try toasted sesame, sunflower, watermelon or pumpkin seeds!
