- 2-3 medium sweet potatoes, skin left on
- 1 tsp cracked black pepper
- 1 tsp salt
- 3 tbsp olive or rapeseed oil
- Preheat the oven to 180C. Add the oil to a baking dish and place in the middle of the oven to pre-heat.
- Wash and cut the sweet potatoes half length-ways, then into thin strips about 1-2cm thick.
- Place in water, bring to the boil and cook for 5 minutes to soften.
- Drain the water and scatter the sweet potatoes in the hot oil in the baking dish. Sprinkle with salt and pepper and toss to coat. Bake for 20-25 minutes until golden and crispy.
