- 4 slices of chunky wholegrain bread
- 2 medium avocados, peeled and stone removed
- 1/2 lime, juiced
- pinch crushed chilli
- small handful coriander leaves, chopped
- Crush the avocado with a fork to form a paste. Fold in the coriander and lime juice.
- Toast the bread then top with the avocado and sprinkle with some chilli flakes.
Rub the toast with a clove of garlic before topping with the avocado. Top with a poached egg for a more hearty breakfast.
